CHOCOLATE FILLING 300ml milk (blue top) 300ml cream 75g coconut sugar 200g dark chocolate |
CHOCOLATE FILLING 1. Roughly chop the chocolate and set aside. 2. Place the milk, cream and coconut sugar into a pot and bring up to the simmer. 3. Remove the pot from the heat and whisk in the chocolate. 4. Allow to cool slightly and pour into ice block moulds. 5. Place ice block sticks into the ice blocks by using the holders provided or by attaching a piece of sliced banana and pushing to the bottom of the mould. 6. Leave the ice blocks to freeze overnight. |
CHOCOLATE CRACK SHELL 360g chocolate (dark, milk or white) 240g cocoa butter |
CHOCOLATE CRACK SHELL 1. Roughly chop the chocolate and place in a pot with the cocoa butter. 2. Melt over a low heat, stirring occasionally, until smooth and shiny. 3. Leave to cool at room temperature. (if it starts to set, re-warm again slightly). |
TO SERVE: 1. Remove the ice blocks from the moulds and dip into the chocolate crack shell. 2. Remove from the dip and hold for three seconds to drip and allow the shell to set. 3. Eat immediately or arrange as a table centrepiece using florist’s oasis and your favourite decorations. |

STRAWBERRY FILLING 2 punnets of strawberries 2 Tbsp of coconut sugar Juice from 1 lemon Assorted fresh berries |
STRAWBERRY FILLING 1. Cut strawberries into quarters and place into a heat proof bowl. 2. Sprinkle coconut sugar over the strawberries and wrap the bowl with clingfilm. 3. Place the bowl over a simmering pot of water, ensuring that the bottom of the bowl is not touching the water. 4. Allow to simmer for 30 minutes until the strawberries are cooked and the juice is visible in the bowl. 5. Remove from the heat and strain the strawberries through a fine sieve, keeping the juice. 6. Drop assorted berries into the moulds, pour the strawberry juice over the berries and fill to the top of the moulds. 7. Leave the ice blocks to freeze overnight. |
TO SERVE: 1. Remove the ice blocks from their moulds. 2. Eat immediately or arrange as a table centerpiece using florist’s oasis and your favourite decorations. |
